Yes you totally just read that right, a caramel dip that is healthy? YUP!!!! Thanksgiving is upon us and Fall is not over just yet! What screams Fall better then fresh chopped apples and caramel dip and even thought it’s still hot here in Nashville, Fall is around the corner! If you are looking for a recipe that is easy, delicious, and nutritious for your next gathering this recipe is for you using just 4 wholesome, simple ingredients plus will nourish you all at the same time! Now lets just set the record straight, this is not your typical sugar loaded, processed caramel dip so it is gonna taste a little different but I really think this recipe is a 1000 times better! The key ingredients including medjool pitted dates, brazil nuts, maple syrup and vanilla make this recipe chalked full of selenium, fiber, potassium, iron, vitamin E, protein, and healthy fat providing great energy! Wholesome Caramel Dip
12 pitted medjool dates-soaked
1/2 cup brazil nuts
1 tsp organic 100% Maple Syrup
1/2-1 tsp vanilla extract or 1 raw vanilla bean
1/2-1 cup water
In a bowl soak the dates and brazil nuts together in 1/2 cup-1 cup water, let soak for approx. 1 hour. After soaking, drain the dates and brazil nuts but save the water and set aside. In a high powered blender, I used the Vitamix, Combine the soaked dates, brazil nuts, maple syrup and vanilla. blend on low- medium speed scraping the sides as needed and add 1/4-1/2 cup of the soaking water back into the mixture until desired caramel dip consistency is achieved. Once the dip is smooth and mixed well remove from blender and serve with sliced apples. So easy and so nutritious plus delicious!!!
