Wheatberries… have you heard of them?? Wheatberries are the whole grain form of wheat meaning it contains all 3 parts of the wheat kernel: bran, wheat germ, and endosperm. Wheat berries are earthy with a slight nutty crunch, versatile, and packed with fiber and protein! A nice grain to batch cook and have on hand for meals during the week.

Meet this filling, cool summer salad that is so easy, packed with fiber, antioxidants, Vitamins A, C, K, potassium, folate, and protein! This is meatless but add grilled or roasted chicken or favorite meat for an extra protein punch!
Wheatberry Berry Salad: yields 1 large salad or 2 small salads.
1/4 cup cooked and cooled wheatberries
2-3 cups salad greens
1/2 cup mixed berries( used blackberries and blueberries)
1 tbsp sliced almonds
White Balsamic Dressing:
1/4 cup olive oil
2 tbsp white balsamic vinegar
2 tbsp fresh squeezed lemon juice
1/4 tsp garlic powder
1 tbsp honey
Mix/whisk salad dressing until well blended.
Make it:
Toss all ingredients together, drizzle with dressing, toss until coated, grab and fork and enjoy!
Tip: Double recipe for salad and dressing for more servings!
Batch cook the wheatberries and use for other dishes/meals throughout the week.
