This delicious and refreshing pineapple boat is packed with skin loving, immune boosting, anti-inflammatory, and disease fighting nutrition.
This meal will deliver loads of fiber, Vitamin C, Vitamin A, potassium, bromelain, B vitamins, and healthy fat. This is such a fun way to re-purpose the pineapple shell and float away to vacation bliss! Give this a try! [
[Recipe]serves 2-4
Pineapple Boat Bliss:
1 pineapple
6 organic frozen strawberries
1 cup carrots
1/4 cup unsweetened coconut
1 tbsp ground flax seed
Make:
Take the pineapple and half the whole pineapple down the middle carefully with a large knife.
Cut and scoop out ( I used an ice cream scoop) the halved fresh pineapple and pour remainder of the fresh pineapple juice in the blender
Add 6 frozen strawberries + coconut, + ground flaxseed.
Blend all together until smooth.
Add smoothie mixture back to the pineapple and top with fresh grated carrot, coconut, and strawberries! Enjoy!
