I just love this recipe since it delivers 2 fold! The ingredients lend itself to creating a healthy oatmeal bar or buffet for a fun, family-friendly weekend treat – or a true grab-and-go cooked oatmeal bar that is perfect for busy weekday mornings to get the day going. If oatmeal is not a favorite, substituting protein packed quinoa would work great too! The ingredients encompass whole foods that are rich in nutrition and provide great energy that does the body good when starting the day! Here is how to create your next healthy oatmeal bar!

 

The Oatmeal Buffet BarOatmeal Bar

  • 2-3 cups cooked oatmeal boiled in skim milk (I used quick cooking oats)
  • 2-3 chopped bananas
  • ½ -1 cup hemp seed (can also use flax or chia seeds)
  • ½  cup chocolate cacao nibs
  • 1/2-1 cup raw pumpkin seeds
  • 1 cup dried cranberries
  • local honey-drizzle

Assemble:  This is the fun part because you can create your own bowl of yummy, hearty, warm goodness. The whole family will enjoy making their own oatmeal bowl, choosing which healthy toppings they desire. Mix your yummy oatmeal bowl together and enjoy!  If cooked oats are not desired this recipe is also great with raw quick oats, the combination of honey and banana moisten the oats very well.

 

TOatmeal Barshe Grab-n-Go Oatmeal Bar

  • 2 mashed bananas
  • 1¼ cup oats
  • 2 tbsp. hemp seeds
  • 2 tbsp. honey
  • 1 cup dried cranberries
  • ½ cup pumpkin seeds
  • ¼ cup chocolate cacao nibs

Instructions: Bake in shallow baking dish in pre-heated oven at 350 degrees for 30-40 min. Once the edges start to brown slightly, remove from heat and let cool thoroughly.  This will create gooey bars, but if a crunchy bar is desired bake for additional 10-15 min. Yields approx 12  small square bars. Enjoy!
