Fresh summer veggies are in their prime – and since fall is just around the corner, I wanted to share one of our favorite healthy recipes we have enjoyed this summer! The Mediterranean Grilled Veggie Wrap is perfect for a quick dinner or lunch that includes an abundance of healthy, fresh vegetables! During the summer months I like to frequent the locally grown pop-up stands and farmer markets packed full of fresh picked fruits and vegetables. This Mediterranean wrap is a meatless meal that delivers delicious flavor and is rich in nutrition for the whole family to enjoy! Here is how to make your next Mediterranean Grilled Veggie Wrap!
Mediterranean Grilled Veggie Wrap
- 1 large eggplant -chopped in thin strips
- 2 squash -chopped in thin strips
- 2 zucchini- chopped in thin strips
- 1 onion -chopped
- 1 container roasted red pepper hummus ( used Sabra)
- 1 4-6 ounce container of low fat feta
- 1 package Ole Extreme Wellness Tortilla Wraps
Instructions: Spray grill pan or coat lightly with olive oil, place all chopped vegetables on grill pan (I used an indoor grill pan on stove) and grill until all vegetables are very tender. Spread 1 large tablespoon of roasted red pepper hummus over 1 flour tortilla, spread evenly. Remove grilled vegetables and place assortment of grilled vegetables on flour tortilla, sprinkle with low fat feta, wrap sandwich and enjoy!! This recipe will yield approximately 4-6 veggie wraps.
