Local dietician recommends healthy options for Super Bowl snacks

NASHVILLE, Tenn. A local dietician is recommending some healthy options for parties ahead of Super Bowl Sunday. It’s considered the second largest food consumption day of the year, just under Thanksgiving.Jenny Beth Kroplin is a registered dietician with Healthy Beginnings.”On average Super Bowl fans can consume anywhere from 3,000 to 5,000 calories on Super Bowl Sunday food and it only takes 3,500 calories to gain a pound,” Kroplin told Nashville’s News 2.

“I recommend people fill up on fruits and vegetables first, Apple Nachos are a great choice versus the classic nachos. The apples have great fiber content which creates bulk in the belly,” she explained.

Kroplin shared some healthier twist on those favorite Super Bowl dishes.  Check out the recipes below.

Healthy Apple Nachos

• 4-5 apples sliced
• 1/2 cup dark chocolate chips
• 1/3 cup coconut flakes
• 2 tablespoons to ¼ cup caramel syrup/ drizzled lightly


Slice apples, assemble on platter, sprinkle above toppings and enjoy! So easy, healthy, and tasty! (If preparing the dish ahead of time try dipping the apples slices in orange juice or lemon juice to preserve color and prevent the apples from turning brown.


• 2 cups cooked peas (fresh or frozen)
• ½ avocado (optional)
• 1/4 cup diced onion
• 1 clove garlic
• ½ package of Guacamole mix (made by Concord foods)
• 1/4 cup cilantro (optional)


In a food processor or blender, blend the peas until smooth.
Add the remaining ingredients and blend completely for a smooth avocado or pulse until desired “chunky” consistency is reached. You can also mix in salsa with the Peas-Amole and that is delicious too! Serve with baked chips or fresh veggies and enjoy!

Buffalo Wing Kabobs

• 1 Rotisserie or grilled Chicken diced or chunked
• ½ cup Buffalo Wing Sauce ( I used Texas Pete)
• 1-2 large stalks of celery diced or chucked
• 2-3 tablespoons reduced-fat blue cheese crumbles
• 16 ounces nonfat Greek yogurt
• 1 package Hidden Valley Ranch dry dip mix
• 1 package kabob sticks


Coat/toss the diced chicken in the buffalo wing sauce, assemble and alternate diced coated chicken and celery on the kabob sticks, sprinkle blues cheese over the kabob, arrange on party platter. Mix the nonfat Greek yogurt with the package of Ranch dip mix and stir until well blended, serve on the side. Extra Buffalo Wing sauce on the side can be served as well. Serve with celery and carrot sticks. Enjoy!
