Behold the golden beet! This lovely little root veggie is perfect to add in your winter smoothie! Since I have been on a smoothie kick lately, I thought I would share another one of my favorites!
This recipe is so simple and nutritious. I love using unexpected foods in smoothies for a different power punch of nutrients! The golden beet offers a punch of nutrients like fiber, potassium, and calcium not to mention the other nutrient rich ingredients included. So if you find yourself in a smoothie rut, here is one to try … I think you will like it!
Golden Beet Smoothie
1 Golden Beet washed, peeled, chopped in half (you can also use red beets)
4-5 frozen organic strawberries
1 cup organic carrots
1 cup vanilla unsweetened almond milk or raw almond milk
1 tbsp honey
1 tbsp hemp seed (optional)
garnish with pumpkin seeds (optional)
Blend all ingredients in high powered blender such as the Nutribullet, Ninja, or Vitamix until well blended. The smoothie will have a slight earthy flair. If you’d like a little extra sweetness factor, just add a tad more honey to the smoothie.
Yields: 1 serving.
