Blueberry Smoothie BowlBlueberry Love! Ok….. can we just say that fresh blueberries are the perfect form of  nature’s candy?!!  Sweet, juicy, plump, and deep in color makes this fruit a true nutritious love in my book! I LOVE blueberries and the bountiful  wellness they have to offer, lets just say good things come in small packages!.  The nutrition behind blueberries is pretty amazing and the best part is that we are just about to hit BLUEBERRY season!!! Blueberries are nothing new to the food scene but boy do they deserve to be a household staple! Blueberries are just 80 calories per 1 cup and pack a whopping amount of vitamin C provided nearly 25% of your daily requirment, fiber, manganese, and are virtually zero fat! Blueberries are among on of the highest in antioxidant fruits making them a fantastic age defying food but  they also can provide wellness benefit in cardiovascular health, brain health, insulin response, and cancer prevention. Blueberries are very versatile but one of my favorite ways to enjoy them is adding them to my smoothies. This Smoothie Bowl recipe is slightly different from the traditional smoothie in that the consistency is slightly thicker and served a little differently in a bowl form plus it is chalked full of antioxdients, beta carotene , protein, fiber, and potassium….. So get your spoon ready and enjoy some blueberry goodness!

Blueberry Smoothie Bowl

2 cups frozen organic blueberries

1/2 frozen banana

1/2 cup carrots

1/4 cup organic greek vanilla yogurt (can substitute coconut yogurt)

1/2 cup coconut water

1 tsp local honey

1 tbsp. chia seeds

How to

Blend in high powered blender such as the Nutribullet, Ninja, or Vitamix until well blended but still thick. Pour into your favorite bowl, top with fresh blueberries and coconut and ENJOY!
