This cool and healthy treat is packed with protein and antioxidants that can pass for a healthy dessert or even breakfast! Easy to make ahead, freeze, and serve! Enjoy!!
Berry Superfood Bark: yields 10-12 servings
1 16 ounce Plain low-fat or nonfat Greek Yogurt
1 cup raspberries
1/2 cup blueberries
1 Tbsp local honey
1 Tbsp chia seeds
1 Tbsp unsweetened coconut flakes
1 Tbsp cacao nibs
In a bowl mix the yogurt, honey, and raspberries , slightly stir and smash the raspberries into the yogurt until there is a pink swirl.
Line pan a 7×9 or slightly larger pan for thinner bark with wax paper. Pour yogurt mixture into pan and spread evenly. Sprinkle blueberries, coconut flakes, chia seeds, and cacao nips over top! Pop in freezer for 2-3 hours. Cut and serve! Enjoy!
