Chia SeedsCHIA, CHIA, CHIA! Ok, so I can’t get enough of this tiny “MIGHTY” seed! It truly is a staple in our family kitchen and chalked full of nutrition! This little seed was deems a “superfood” my the ancient Aztec culture and “superfood it still stands today…..pretty cool right?!! Chia seeds are a fantastic age defying food filled with high amounts of antioxidents, omega 3 fatty acids, protein, fiber, and iron. In fact just 3 tablespoons provide 48% of your daily fiber. Another fun fact about chia seeds is that they are so versatile, they actually will expand 9 times their little size when added to any liquid making these little dudes a great nutritional boost to your smoothie, cereal, and salad dressings. They can also be added to baked goods, top on salads, add in soups our stews, really they can be added to just about any food! Chia seeds are definitely a great “superfood’ staple to keep on hand!

My Age Defying Chocolate Chia Seed Pudding is super simple and delicious perfect for a healthy breakfast, dessert, or snack. The combination of the antioxidant rich chia seeds, the calcium and protein for greek yogurt,  the antioxidant rich 100% raw cacao powder, and  top the pudding with fresh chopped berries makes this recipe an age defying powerhouse! Age Defying Chocolate Chia Seed Pudding

1 cup skim milk ( can substitute almond milk, cashew milk or lactose free milk)

1/2 cup nonfat vanilla greek yougurt (can substitute coconut yogurt)

1/4 cup chia seeds

1-2 tbsp. local honey

1-2 tbsp. 100% raw cacao powder

1 tsp vanilla extract (optional)

Toppings: Blueberries, strawberries, coconut

How to:

Mix the milk, yogurt, honey, vanilla, and cacao powder together and whisk until well blended, add in the chia seeds and whisk well again. Pour into glass or container, cover, and refrigerate overnight.
